This course is intended to provide learners with a basic understanding of nutrition, the requirements of special diets and the planning and provision of well-balanced healthy meals. This course is for managers, cooks, chefs and kitchen assistants and so will benefit anyone who prepares and serves food.
Topics include:
1. The elements of a healthy diet including essential nutrients, the Eatwell Guide, food labelling and Reference Intakes.
2. The main features of special diets in relation to age, different cultures and health issues.
3. The food preparation techniques suited to special diets.
The course is assessed by a multiple choice test.

The course is of six hours duration and is followed by a thirty minute multi-choice examination paper, which may be conducted orally (oral examination must be requested on application). This qualification contains 20 questions and candidates achieving 14 or more correct answers will be awarded the Level 2 Award in Healthy Food and Special Diets certificate.
Please note: Candidates will be required to provide photo ID (eg. Valid Passport - any nationality / signed UK photocard driving licence / Work ID).
